For me personally I love dips, spreads, dressings and sauces. You?  Veggies never get old when you dress them up with goodness.   Ok.  I am so hooked on this recipe from the Spring Reboot that I just have to share it.  Get this… It’s a nut free + dairy free version of the stuff we love but tend not to eat because…. well… the traditional stuff is higher in fat that we like to admit sometimes.  If you love pesto who says you have to swear it off?  Not this girl!  This stuff actually does you mucho grande favors and get this… You can actually consume it everyday during the Reboot and and wait for it….. reap benefits. Nut Free + Dairy free healthy version of a traditional favorite

  1. 1 cup loose packed fresh basil
  2. 1/4 cup cilantro
  3. 1/4 cup fresh parsley
  4. 2-3 sun dried tomatoes
  5. 1/2 tsp apple cider vinegar
  6. 1 clove garlic
  7. juice from 1 lemon
  8. 1 tbsp sunflower seeds
  9. 1/4-1/2 cup extra virgin olive oil
  10. sea salt + pepper to taste
  1. Toss it all in the food processor or high speed blender and pulse a few times while adding the olive oil.
  1. I like it to have a little texture but you can smooth it out as much as you like by pulsing more. If you are going to store it in the refrigerator pour an additional thin layer of olive oil over the top to preserve the color.
  2. use as a dip or a spread.
  3. Enjoy!
