Adults are so set in their ways it’s not even funny. My friend was visiting from out-of-state and I had just baked some kale chips. I love kale chips. LOVE THEM. I will surely be sharing with you my method. Unfortunately, not today. I know…I am such a tease. She was eventually brave enough to try one and faster than she put it in her mouth she was spitting it out in her hand as if I had just coerced her into trying rabbit pellets. “It tastes like dirt!”, she sputtered. Dirt? What? There aren’t any beets in there! And that was it.
Her reaction me a little sad but I suppose it’s hard for anyone to jump right into that when they are not used to eating a certain way. My bad. I probably should have tried to give her the green smoothie I am about to share with you. It’s a good starter recipe and the kids will love it! It is straight up tasty like dessert and you can’t even taste the spinach or kale. Popeye had it all wrong.


Ingredients
- handfull of spinach
- 3 stalks kale (stems removed)
- 1 1/2 - 2 cups silk dark chocolate almond milk
- 5-7 ice cubes
- 1 tbs peanut butter
- 1 frozen banana
Instructions
- throw it in your vitamix (or blender) and give it a whirl.
- i like to start with lesser amounts of almond milk and add more if needed.
- if it is still to thick for you add a little more almond milk or a little water.
If you are still on the fence about going green get a load of these kids. Kids don’t front when it comes to food. So cute.
