fresh beet carrot apple celery lemon juice | health benefits of the beet

I have never been one for super earthy or bitter tasting anything.Same girl that damned brussels sprouts to hell a little over a year ago.  They are now hands down my favorite veggie.  Go figure.  I thought for sure I would always have the same opinion about beets. Those dirty little veggies.  Belch.

While pretending to be a local in San Francisco last week some friends and I were enjoying the awesomeness that is Pizzeria Delfina. Seth ordered us some marinated beets along with some other sides for the table. I ate a few bites……ya know…to live a little.  My response…”they are not the worst beets I have ever had.” Progress made.

The next day I was in the Ferry Building in line for a fresh squeezed juice and the girl in front of me had them add beets to the same drink I was about to order.  It was the most beautiful color. So, I copy catted the shizz out of her. I totally pulled a  ”I’ll have what she’s having.”  and I LIKED IT!  I loved it actually.  Shocking.  So don’t be afraid to bitch slap your twelve year old self into repeatedly trying things you think you don’t like. Especially things that are good for you.

This is what I put through my juicer.

Serves 2:

• 4 large carrots
• 4 large celery stalks
• 2 granny smith apples
• 2 small beets
• 1 small lemon (i just squeeze this in at the end)
• 1 tsp of flax oil or efa oil to each glass at the end to help absorb all of those beneficial nutrients.
